This is an incredibly valuable test when it comes to understanding the limitations of an athlete with regard to energy systems. If you know how to interpret the results of a VO2Max test, then you are able to very specifically manipulate an athletes training to increase their ability to sustain long duration efforts at a maximal pace, which for the sport of CrossFit is ideal.
